We made this meal last night with a recipe from Pillsbury Bake-Off from May of 2005.  This recipe was really good and fairly simple.  We had plenty too.  I thought it was just a bit too spicy, but Tony really enjoyed it and the kids both ate some of it.  We had a salad and garlic bread with it.  Yum!  Tony helped quite a lot with this meal: prepping the chicken, etc.  (Really he did most of the work.)  I would definitely make it again - even the leftovers were good! Recipe #19 - Cheddar Broccoli Bake

This side dish was absolutely delicious and a little naughty.  My 3-year-old and my 17-month-old loved it and ate second (and third for my daughter) helpings!  Another thing that's great is that it's easy to make.  This would be good with chicken as a main course.  Definitely on our repeat list.  This recipe was taken from Pillsbury Casseroles from October of 2000. Recipe #18 - Peachy Fruit Smoothies

Made these delicious smoothies last night for my hubby and me.  Yum!!  Didn't know if the blender was going to make it through all that yummy goodness, but it did.  Well worth it!  My husband liked his, and he's not a big peach fan.  I highly recommend these tasty treats, and I am looking forward to trying more smoothie recipes very soon!!  This recipe was taken from... Recipe #9 - Oatmeal Carmelitas

Recipe #8 - Cheese-Topped Taco Pie

Recipe A - Colorful Vegetable Stroganoff

This recipe is labeled with an A because my husband made the recipe entirely by himself while I was running an errand last night.  I won't count it as part of my 22 recipe quota.  I have to say that this meal was quite delicious.  It has no meat in it, but the recipe book did indicate that adding chicken would be a nice touch.  It was delicious vegetarian-style, but I believe it would be quite yummy with chicken as well.  Bonus for us was that both of our older children ate it with no complaints.  Yippee!!  This will certainly go on the repeat list.  Fresh carrots and broccoli contribute to the "colorful" part of the recipe.  Very good!  Would be wonderful with a salad or cheesy garlic bread.  Taken from Pillsbury Pasta from October of 1996.  If you're interested in learning more or getting the recipe for this delicious linguine dish, please let me know!

Recipe #7 - Spinach Pesto Manicotti

Recipe #6 - Pepper Biscuit Pull-Apart

D-e-e-licious!  Yum!  A great start or accent to any Italian pasta dish and so simple to make.  These biscuits have olive oil, green pepper, red pepper, mozzarella, parmesan, and just the right combination of spices.  I made mine on my Pampered Chef pizza stone - perfect!!  Give them a try!  I found this recipe in Pillsbury Bake-Off from May of 2005 again.  It really is full of yumminess!!  Is that a word? Recipe #5 - Spanish Rice Salad

Pillsbury Bake-Off from May of 2005 is where this delicious side came from.  I did the majority of the work on this one, except the chopping.  ;-)  We enjoyed this side immensely - the combination of rice, onion, pepper, mexicorn, spices, along with the "dressing" was very tasty.  It made a wonderful addition/accent to the pizza we had this evening.  Another great recipe we will add to the repeat list! Recipe #4 - Chicken Fajita Pizza

I will admit that my wonderful husband did the vast majority of the work on this if not all.  He did a fantastic job and the pizza was delicious.  I would highly recommend this homemade pizza.  The chicken is seasoned well while cooking and red pepper and onion are then added to the pan.  Very delicious!  Not a big hit with our 3-year-old, and our 16-month-old only ate some pieces of chicken we picked off for him.  We will still add this great recipe to our repeat list.  I found this yummy meal in Pillsbury Bake-Off from May of 2005.  Definitely worth the time.  Can I say that even though I really didn't do the work? Recipe #3 - Traditional English Bread-and-Butter Pudding

Recipe #2 - Linguine with Pork and Garden Vegetables

Tonight's meal was made by my handsome husband and myself.  We did things to prepare this meal that do not normally happen in our house.  We chopped vegetables, we used garlic cloves, we even sliced pork (well T did anyway).  Oh, did I mention the refigerated pasta we used?  Yummy!  I am not a huge pork fan but T is.  It was pretty tasty, especially the fresh veggies and the aforementioned pasta.  It was really fun cooking with my favorite man and best friend.  This recipe was taken from Pillsbury Pasta from October of 1996.  Thanks, Mom, for the book! Recipe #1 - Chocolate Chip-Peanut Butter Squares

My first recipe is a dessert, of course!  If you know me, that shouldn't surprise you.  The cookbook I'm starting with first is Pillsbury Bake-Off from May of 2005.  This dessert has 4 ingredients.  I thought I'd start with simpler recipes and work my way up to the more challenging ones.  I must say they were quite yummy, but I'm guessing they'll be better after they have a chance to chill.  The ingredients: creamy peanut butter, powdered sugar, vanilla, refrigerated chocolate chip cooke dough.  Naughtiness - pure and simple.  Sugar, sugar, and more sugar.  I suggest a tall glass of milk.  Want more details, let me know! My Food Challenge Starts Today

Food challenge?  Yes, I've been watching a lot of Take Home Chef recently and have decided that I need to be a better cook.  I use the term loosely.  I do enjoy making home-cooked meals - some are not that great, but they're still made by me at home.  I have decided to challenge myself to make 22 or more new (never made before) recipes in the next 60 days.  All recipes count - lunch, breakfast, dinner, dessert, etc.  The whole idea is to cook, bake, or make new things for myself and my family.  Tonight, I kicked off my Food Challenge.  I will tell you all about it shortly.  So, I need to make 21 or more new recipes by April 13, 2012.  Anyone else want to join in the fun?  Looking forward to sharing my cooking adventures with all of you!!
